Braised Dried Red Head Fish

The dried red-headed fish I dried myself tastes really good after braised in braised sauce. My husband likes it very much.

Prepare onions, ginger, garlic, and chilies.

Soak the dried red-headed fish in water for 3-4 hours in advance until it reaches your preferred hardness.

Heat oil in a pan, add onion, ginger, garlic and chili and stir-fry until fragrant.

Add the dried fish and stir-fry.

Add some cooking wine to remove the fishy smell.

Add the very fresh soy sauce.

Add appropriate amount of water, add some braised sauce and mix thoroughly.

Add appropriate amount of salt, mix thoroughly and cook over medium-low heat.

Cook until the soup thickens, add chicken essence, stir well and serve.
