I bought a pound of Xiaomakou. This kind of small fish has tender meat but a lot of burrs, so Tianjin people generally like to fry it. The fried fish bones are crispy, and they are great when dipped in salt, pepper or chili powder, eaten with wine, and rolled into rolls

Remove the head, guts and clean the small horsemouth fish.

Add a handful of peppercorns and 2 teaspoons of cooking wine
