Blanch the shrimps in boiling water, peel them and chop them into paste. The top meat is also chopped into puree, and then the two are mixed together. Add oil, salt and other seasonings.

After mixing, sprinkle a little bit of minced green onion and mix.

Cut each piece of water tofu into 4 small pieces evenly. Use chopsticks to poke a small hole in the middle and stuff it in carefully.

Then put it in a pan and fry it over low heat until it is slightly golden (or you can steam it directly).

After frying on one side, switch to frying on the other side. When it's done, put it on a plate and steam it over water or put it in a pot to cook. Eat with or without seasoning.

Stuff the remaining meat into the sliced bitter melon with the heart removed. After that, just add water in a pot and cook. If you are afraid that the bottom of the pot will be burnt, you can place Chinese cabbage underneath.
