Ingredients to prepare: beef tenderloin, white jade mushrooms, soft tofu, eggs, cilantro, chives

Cut the beef tenderloin into cubes, then chop finely, dice the tofu, dice the white jade mushrooms, put the egg white into a small bowl, and mince the green onions and coriander.

Soak minced beef in water and prepare wet starch

Stew minced beef in boiling water

Skim off the scum (move quickly)

Boil the beef until just cooked and take it out

Put water (or chicken stock) in a pot and bring to a boil, add white jade mushrooms

Put soft tofu

After boiling, add beef.

Add salt

Add pepper
-
Pour in wet starch

Beat in egg whites and boil, add sesame oil and serve. Sprinkle coriander and green onions before serving
