Cut pork into cubes.

Wash the spring bamboo shoots and cut them into pieces. If they are unprocessed spring bamboo shoots, blanch them in salt water.

Add butter to the pan and melt over low heat.

Add pork and fry until golden brown.

Add ginger slices, scallions and star anise and stir-fry until fragrant.

Add cooking wine, black bean soy sauce, dark soy sauce and vegetables and stir-fry evenly.

Add the spring bamboo shoots and stir-fry evenly.

Pour in an appropriate amount of water and bring to a boil, then reduce to low heat and simmer for 1 hour, add salt to taste and then reduce the juice over high heat.
