Cut the short ribs into small pieces, wash and blanch.

Change the water and cook for 30 minutes.

Remove, add cooking wine, light soy sauce, dark soy sauce, 2 tablespoons of balsamic vinegar, and marinate for half an hour or more.

Take out and drain.

Fry over low heat with less oil until golden brown on both sides, turning frequently.

Add the water used to marinate the pork ribs, half a bowl of broth from step 2, sugar, salt and chicken essence. Bring to a boil, turn to low heat and simmer for 10 minutes.

Reduce the juice over high heat, add 1 tablespoon vinegar and chicken essence (shiitake mushrooms are usually not added, but I love them).

Garnish with sesame seeds when serving.
