Yogurt honey bean bread

Prepare the red beans. Wash the red beans with clean water, then add appropriate amount of water and soak them overnight.

Drain the soaked red beans and put them in a pot. Add an appropriate amount of water (the water should cover the red beans by about 3cm)

Turn on the gas stove and bring the water to a boil. Then reduce the heat to a low heat and cook slowly until the water is almost dry. Add 30 grams of white sugar and stir evenly. Continue to cook over low heat until the soup dries up.

Put plain yogurt into the bread machine.

Except butter and honey beans, put all other ingredients into the bread machine. Start the dough kneading process. After a program is completed, add softened butter and start the kneading program again until the dough forms a film.

Roll it into a round shape and place it in a warm place to ferment until it is 2-2.5 times larger. The fermentation time will be different depending on the temperature. Keep an eye on the dough during the process. When the dough is fermented, dip your finger in water and poke a hole. If the hole does not shrink, it means it has fermented.

Divide into two equal portions, roll into a ball, cover with plastic wrap and rest for 20 minutes.

After 20 minutes roll out the dough.

Put an appropriate amount of honey beans on the upper half.

Divide the lower half evenly with a spatula.

Roll up from top to bottom.

Place into an oval cheese mold.

Place it in a warm and humid environment (reference temperature is about 38 and humidity is about 75%) and finally ferment until it doubles in size. Brush the surface with a thin layer of egg wash, place it in the middle rack of the preheated oven, and bake at 170 degrees for about 15 minutes, until you see the color on the surface.
