Overview
I remember when I ate this shrimp slippery for the first time, I was completely attracted by its tender and smooth texture. At that time, I thought that I must try to do it in the future. Wash the shrimps and remove their shells.

Cut the back of the shrimp open and remove the shrimp lines with a toothpick. Process all the shrimps and put them into a larger container.

Cut the green onion into small pieces, shred the ginger and add appropriate amount of water to soak. Set aside.

Put 2/3 of the shrimp meat into a blender and blend into puree.

Pour the shrimp paste into the basin, cut the remaining 1/3 of the shrimp into diced shrimp and pour it into the basin.

Add an egg white, appropriate amount of salt, green onion and ginger water, and stir well with a whisk.

Add a spoonful of starch and continue stirring for 2 minutes.

Put the shrimp paste into a plate and flatten it, cover it with plastic wrap and put it in the refrigerator for 2 hours before eating.

Boil water in a pot. When the water is slightly hot, use a stainless steel spoon to scoop the shrimp into the water. After the water boils, skim off the foam, add salt, light soy sauce, and coriander and serve. A more exciting way to eat it is to make a sauce with salt, light soy sauce, chili oil, balsamic vinegar, minced garlic, sugar and coriander. It will be more enjoyable to eat with the sauce.
