Prepare the ingredients, peel the garlic, ginger slices, red pepper, and onion and lay them on the bottom of the pot. This three cup chicken curry leaves is the essence. Haha

This three-cup chicken uses Shaoxing Huadiao wine (different from the Taiwanese method, which uses rice wine).

Wash the chicken wings and boil them for 5 minutes, then turn off the heat and simmer for another 5 minutes until the meat is tender and the skin is tough.

Wash the cooked chicken wings with cold water and set aside.

Heat sesame oil in a pan and stir-fry garlic and ginger. Add red pepper.

Pour in the drained chicken wings and stir-fry.

A cup of soy sauce (green soy sauce: dark soy sauce = 4:1), a cup of Shaoxing Huadiao wine, and a handful of rock sugar. Bring to a simmer.

Reduce the juice over high heat, add curry leaves, stir well, and pour into the casserole to continue to reduce the juice. Drizzle in a little sesame oil before serving. You're done. It has a unique flavor.
