  2. This three-cup chicken uses Shaoxing Huadiao wine (different from the Taiwanese method, which uses rice wine).

  3. Wash the chicken wings and boil them for 5 minutes, then turn off the heat and simmer for another 5 minutes until the meat is tender and the skin is tough.

  7. A cup of soy sauce (green soy sauce: dark soy sauce = 4:1), a cup of Shaoxing Huadiao wine, and a handful of rock sugar. Bring to a simmer.
