Peel and dice the lotus root, peel and dice the carrots and set aside.

Take a spoonful of Laoganma's meat slices, marinate them with light soy sauce, oyster sauce, and corn starch. Slice red peppers, peel and slice garlic, and cut green onions into sections for later use.
