Corn, Lotus Root and Pork Ribs Soup

Cut the ribs into cubes and set aside.

Cut corn into cubes and set aside.

Cut lotus root into pieces and set aside.

Chop onion, ginger and garlic and set aside. Prepare some wolfberries for decoration. Don't let it go if you don't have it.

Add boiling water to the pot, add the ribs, add a few slices of ginger, add a little cooking wine, and blanch the ribs for 10 minutes to remove the fishy smell.

Remove the blanched pork ribs and set aside.

Put oil in the pot and fry the ribs over low heat.

When the ribs are fried until golden brown on both sides, add onion, ginger and garlic and sauté until fragrant. (Note: The onions, ginger and garlic are added later to avoid burning the pot)

When the ribs are fried to golden brown on both sides, pour in an appropriate amount of boiling water. The boiling water should be 3-4 inches higher than the ingredients. I added boiling water from an electric kettle. Add corn and lotus root; add appropriate amount of salt and pepper to taste. (Note 1: How much boiling water to add depends on the ingredients. Note 2: Add a small amount of salt first. If it is bland when it comes out of the pot, add some more salt.)
