Home-style stir-fried eggplant has been my favorite since I was a child. The combination of the slightly sour tomatoes and the mild spiciness of the peppers makes this dish sour, spicy and delicious, and is perfect for rice.

Wash all materials

Peel the eggplant and cut into chopstick-thick strips

Cut the peppers in half, remove the stems, and cut into shreds

Shred the peppers and cut the tomatoes into watermelon wedges

Heat the wok with cold oil, add a few peppercorns and sauté until fragrant
