Chop the pork (lean meat) into pieces, add light soy sauce, pepper water, cooking wine, oyster sauce, and minced ginger, stir evenly and set aside for a while.

Add an appropriate amount of water to the flour, knead it into a dough of moderate hardness, and let it rest for more than half an hour.

Wash the celery, cut into long sections, blanch for 1 minute and remove.

Add an appropriate amount of cooking oil to the pot, heat it to 50% heat, add the yellow sauce, and fry over low heat until fragrant. After cooling, add the minced meat, minced green onions, and minced celery (chop the vegetables and squeeze out the water).

Add salt and sesame oil and stir evenly.

Divide the dough into small pieces, roll it into thin slices, and make dumplings (fancy dumplings are my daughter’s craft).

Put an appropriate amount of water into the pot and bring to a boil, add the dumplings and cook.
