Cut the eggplant into sections and soak in white vinegar water for 5 minutes, take out and place on a plate, brush with oil and steam over high heat for 5 minutes; then immerse in cold water and set aside.

Slice garlic, mince green onion, chop millet pepper, and coriander; then drain the eggplant, tear it into strips by hand, put it in a glass bowl (large), and sprinkle with ingredients.

Heat the oil in a hot pan. When the oil just starts to bubble, turn off the heat and pour the oil on the eggplant.
