Slice the pork liver into thin slices or small strips according to your preference. Then add cooking wine, light soy sauce, and white pepper and marinate for twenty minutes. Then add sweet potato starch (other starches are also acceptable) and mix well to make a paste.

Boil water in a pot, and when it is 70% boiling, add the marinated pork liver and bring to a boil over medium-low heat. After the water boils, boil it for another two minutes, take it out and drain it.

Shred the ginger and cut the green onions into sections. There is also a sauce preparation here. Use sweet noodle sauce, oil, light soy sauce and a little water to make a sauce.

Put cooking oil and sesame oil in the pot. When the oil is 60% hot, add shredded ginger and fry over medium heat.

Wait for the shredded ginger to dry up, add the pork liver, stir-fry over high heat for one minute, then add the prepared sauce, stir-fry over high heat for one minute, finally pour cooking wine, add green onions, stir-fry for 30 seconds and it's done
