Wash all vegetables, remove stems from mushrooms and slice into slices, slice carrots, sliced dried sesame seeds, cut tomatoes into cubes and set aside

Add oil to the pot and sauté the tomatoes. Add two bowls of water to the pot and bring to a boil. Add carrots, shiitake mushrooms, dried sesame seeds and udon noodles and cook for about five minutes
