Blanch the pork ribs in cold water, remove and wash away any foam.

Put oil in the pot, add rock sugar, pork ribs and spices and stir-fry.

Add cooking wine, light soy sauce, and dark soy sauce and stir-fry until coloured.

Add enough water to cover the ribs and cook for 20 minutes.

Peel and wash the taro.

Cut the hob block.

Add the pork ribs, season with salt and cook for 10 minutes.
