Overview
The seasoning can be slightly spicy, medium spicy, extra spicy, spicy, hot and sour, etc. according to personal taste. The one I made is extra spicy.

After cleaning the Guizhou fish, cut the sides of the fish body as shown in the picture.

Put it into a basin and add cooking wine and salt to taste.

Cut onions into small pieces

Cut the onion into wide strips and set aside

Cut all the grilled fish seasonings as shown and set aside

Butter the peanuts until fragrant and set aside

Chop bean paste into fine paste

Dried chili pepper, Sichuan peppercorns, tempeh

Add konjac, potatoes, lotus root according to personal taste, cut it thinly and add it to the fish.

Pour oil into the pot and heat, add bean paste and stir-fry until fragrant, then add chopped onion, ginger, garlic, coriander, celery, onion, tempeh, green chili pepper, millet pepper, Sichuan peppercorns, stir-fry until fragrant (the smell of grilled fish will be obvious when these seasonings are added to the pan, even though the fish is not in the pan, haha😄.)

Once you smell the aroma, you can stir-fry over low heat for a while to make it more fragrant and achieve the desired taste. Then add water, salt and light soy sauce, bring to a boil and simmer over low heat. Note that the water should be enough to cover half of the fish's body. The amount of water is very important.

Put the fish into the pot and fry it from the front side

This way the back side is cooked. Because the fish I bought is Guizhou fish, the skin is thicker and it is not easy to fry over low heat. I personally think that frying fish in a pan is better than frying it in a wok.

After the fish is fried, pour in the cooked grilled fish seasoning soup, and sprinkle with chopped green onion, minced garlic, peanuts, onion rings, millet pepper, dried chili, and pineapple.
