Overview
I like old-fashioned bread very much, the texture and taste are very appetizing. I have baked it in the oven several times before, so I thought about using a bread machine to try it this time. The effect is also good~~ Ingredients Starter: 200g high flour, 16g fine sugar, 4g yeast, 160g water. Main dough: 200g high flour, 64g fine sugar, 16g milk powder, 3g salt, 60g egg liquid, 36g water, 48g butter.

Put the starter ingredients together into a small basin, stir evenly and cover with plastic wrap to ferment

Ferment to the point where it expands and then falls back

When you peel the dough apart, you can see that the inside is honeycomb-shaped

Put the main dough ingredients except butter into the bread barrel

Add the starter ingredients prepared previously

Place the bread bin into the bread machine and secure it

Start dough kneading program for 12 minutes

After the program is finished, add butter

Start the sweet bread program, 900g, dark brown

When the program enters secondary fermentation, press the pause button

Take out the dough and divide it into four parts (note that there is no need to deflate the dough)

Take a piece of dough and roll it into a long shape

Fold it in half and twist it a few times in one direction to form a twist

Insert one end into the hole at the other end and the dough is ready

Shape all four doughs in sequence

Put it into the bread bucket

Put the bucket back into the bread machine and secure it, and the dough will continue to ferment; during this period, you can pause the program based on experience to allow the dough to ferment completely;
