Spicy Tofu in Bone Broth
Overview
The most common stall at the farmer's market sells spicy tofu in chicken soup. A large bucket of fried tofu is soaked in chicken soup (I personally think it may not be chicken soup), and the price is not cheap. I made it once with the old soup of stewing bones, and it tasted very good. The tofu absorbed enough of the flavor of the bone soup, and it became spicy tofu in bone soup.

Ingredients
Steps
-
Rinse the old tofu and cut into large pieces;
-
Beat an egg and add 2 sides of tofu covered with egg liquid;
-
Put a little oil in a pan and fry the tofu until golden brown on both sides;
-
Fried tofu;
-
In a separate wok, add bone broth, dried red pepper and ginger slices;
-
After boiling, add the fried tofu, bring to a boil over high heat, then turn to low heat and simmer until the soup is reduced and thickened, and the tofu begins to become enlarged. Taste for saltiness. Old soup has a strong taste, so generally no salt is needed. Just scoop it out.
