Raw materials; clean the fish, cut the fish body into two diagonal cuts on each side (experience tells me that choosing a smaller fish soup will make the soup thicker)

Heat the wok slightly and rub the bottom of the wok with ginger slices;

Put a little oil in the pot, heat it up to 70%, put the fish in, fry both sides until slightly brown, remove and set aside;

Add boiling water;

When the boiling water just covers the fish body, add the chives; simmer over high heat for 20 minutes;

After about fifteen minutes, the soup has become very thick (pay attention to the amount of water during the simmering process) and then turn to low heat and simmer for another five minutes;
