Poached Cod with Tomato
Overview
Silver cod is rich in nutrients and delicious. If you use ordinary frying method, it will taste very good. Someone happened to give me a small basket of fresh tomatoes at home. Using tomatoes to make fish is a new method in Cantonese cuisine. It draws on the combination of Western food to bring out the umami flavor of the fish and add a bit of sourness to whet your appetite.

Prepare tomatoes, cod and other ingredients.

Cut the tomatoes into thick chunks.

Cut the cod into thick slices and marinate them with salt and cornstarch.

Heat a pan, heat the oil over high heat, and fry the fish.
