Steps
-
Bring the water to a boil (it is recommended to add a little salt), put the pasta upright, wait until the lower part is soft, stir with chopsticks, and make sure the noodles are completely submerged in the water. Cook uncovered over medium heat for 15~20 minutes, select the desired hardness and remove
-
While the noodles are cooking, prepare the ingredients for the stir-fry sauce. There is no parmesan cheese to be ignored. Ham sausage can be replaced with bacon or other minced meat
-
Cut all ingredients into cubes
-
Heat oil in a pan (western food mostly uses butter, I am used to vegetable oil, which has low calories). Tomato sauce does not absorb oil, just add half the amount of oil you usually use for cooking
-
Add onions and stir-fry over high heat until golden
-
Add mushrooms and ham sausage and stir-fry for 2 minutes. Add 1 spoon of light soy sauce, 1 spoon of oyster sauce, 1/2 spoon of black pepper (or white pepper)
-
Stir well and then turn to medium heat, add tomato paste and stir fry for 1 minute
-
Add 100ml hot water
-
Add 2 tablespoons of Parmesan cheese, if not available please ignore
-
Add 2 tablespoons of sugar. You can add a little salt according to taste, I think it’s just right without adding it
-
Stir until the sugar is fully melted and the sauce is thick, then turn off the heat
-
Take out the cooked pasta and pour it into cold boiling water (or mix it with olive oil and shake it up)
-
Serve on a plate and garnish with mint leaves
-
If you can tolerate spicy food, add a few drops of chili pepper to taste. It tastes great😋
