For pork belly, it’s best to choose the leaner ones

Mash the garlic into minced garlic and set aside

Chop the pork belly into minced meat, add cooking wine, light soy sauce, sugar, salt, minced garlic, pepper and red yeast powder and mix well

Add corn starch and appropriate amount of water and mix in clockwise direction

Soak the casings in clean water for a while. You can use pig intestines or sheep intestines for casings. Mine are processed pig intestine casings

Tie one end of the casing with a string

Place the funnel and start enema

After filling, tie it with a string. You can divide it into sections of about ten centimeters. Use a toothpick to pop out the air bubbles inside, so that it will not swell or explode when baked

Place a layer of tin foil on the bottom of a baking pan, place the intestines on top, preheat the oven to 180 degrees for two minutes and place into the baking pan

Take it out after baking for three minutes, apply a thin layer of cooking oil on it with a brush and continue baking

Bake for about 20 minutes, turn over and continue baking. Bake for another 20 minutes and it will be almost ready. This time depends on the temperature of your oven
