Broccoli and Bacon Pie

Prepare the required pie crust ingredients, soften the butter at room temperature, and sift the low-gluten flour

Mix egg yolks and water and stir well

Add fine sugar and salt and stir until melted, then refrigerate

Press the butter with a spatula until soft

Add sifted cake flour

Press the flour into yellow granules until there is no white flour left

Add refrigerated egg yolk liquid

Use a spatula to press the flour into a ball

Put the balled pie dough into a sealed bag (plastic wrap), roll it out with a rolling pin to a thickness of 2cm, and refrigerate it overnight

Take out the refrigerated pie crust (beat it with a rolling pin until soft), roll it into a 5mm pie crust

Cover the rolled out pie crust on the UN26144 pie plate, poke holes with a fork, and continue to freeze for more than 2 hours

Take out the frozen pie shell, put it on tin foil or oil paper (press it with a heavy stone) and bake in a preheated oven at 200 degrees for about 25 minutes

When baking the pie crust, prepare the filling and filling liquid; wash the broccoli, blanch and drain, set aside, dice the onion and stir-fry the bacon, wash and slice the mushrooms, slice the hard-boiled eggs and set aside

Mix whipped cream and milk and heat

Slowly add the whole egg liquid to the whipping cream and milk mixture, and mix well with a manual egg beater

After all the filling liquid is mixed, filter it

Add salt and some black pepper to taste

Spread the filling ingredients on the baked pie crust, pour the filling liquid until it is 90% full

Preheat the oven to 200 degrees, with upper and lower heat, and bake the middle layer at 180 degrees for 25 minutes, until the surface is indented and becomes solid
