Remove the roots of the enoki mushrooms and clean them.

Bring water to a boil in a pot, add a little salt and salad oil, add enoki mushrooms and blanch.

Rinse the blanched enoki mushrooms with cold water and drain.

Add peppercorns, aniseed, bay leaves, Pixian bean paste, Chaotian pepper sauce, and garlic into the pot (you can leave it out if you don’t like the smell of garlic, but I didn’t).

Add a little more salad oil and simmer slowly until red oil comes out.

Put the sugar, salt and MSG into the cooled enoki mushrooms and stir evenly.

Let the cooked red oil cool and then pour it on the enoki mushrooms and mix well. Remember only red oil.

You can make more at a time and store it in the refrigerator for convenience when eating.
