Homemade gluten
Overview
Home cooking here does not refer to the home-cooked taste in Sichuan cuisine, but refers to home-cooked dishes made at home. Speaking of gluten, its dried form is also called roasted bran, which is usually used to make Sixi roasted bran or eat hot pot. Roasted bran is a vegetable protein and tastes very good. I bought it wet at the vegetable market, and the stall owner sold it with cold skin. I asked for whatever I wanted, often a little, and when I got home, I added green peppers or celery and stir-fried it at will. It was delicious.

Cut the gluten into cubes, cut the celery into sections, and chop the onion, ginger and garlic.
