Put sugar, apple cider vinegar, mature vinegar, light soy sauce, and oyster sauce in a bowl, add water to fill the bowl halfway, mix well and set aside.

Peel and slice the pink lotus root, blanch it in boiling water for 3 minutes, remove and drain.

Add vegetable oil to the pot, add onions and garlic and saute until fragrant.

Add lotus root slices and stir well.

Pour in the sauce and stir-fry until the juice is reduced.
