Braised eggs
Overview
I finally came to pull the weeds. I started talking about making braised eggs last year. Every time I buy eggs, I always give up. This time, it is easy to operate, and the taste is better than what is sold in stores outside. It is mainly clean. If you have time on the weekend, make a pot for the family, drink a can of beer, and chat. When you are too late in the morning, cook a bowl of noodles, add a spoonful of meat sauce, some vegetables, and a braised egg. It is perfect...

Prepare the required eggs. How many eggs will be marinated depends on the number of people
-
Many of you probably don’t know how to boil eggs, so today we will start from scratch and clean the eggs. Remember, don’t wash the eggs if they don’t need to be marinated, otherwise they won’t be stored for a long time
-
Soak the washed eggs in a large bowl filled with water for a few minutes so they are easier to cook
-
Let's start cooking. Remember to put it in the pot with cold water [otherwise the outside will be cooked and the inside will still be syrupy] when putting it in the pot. Also, when cooking, don't make it too hot, otherwise the eggshell will easily break when boiling. You also need to use chopsticks to stir it a few times in the middle of cooking. After the eggs are evenly heated by the hot water, boil them for about eight minutes.
-
If you have a refrigerator at home, prepare some ice cubes in advance and add cold boiled ice cubes to a large bowl
-
The ingredients for boiled eggs are some common ones
-
Add the hard-boiled eggs to the ice water immediately so that they can be peeled off easily after a while
-
Prepare a small pot and add appropriate amount of cold boiled water. A bottle of beer [Adding beer can remove the bitterness and astringency]
-
Add an appropriate amount of 60ml light soy sauce and two tablespoons of dark soy sauce,
-
Two spoons of sugar
-
And those spices we just prepared
-
Cook over high heat for about fifteen minutes until the flavor develops. Add an appropriate amount of chicken powder. Seasoning salt is not needed. Dark soy sauce and light soy sauce have saltiness
-
During the cooking process, let's start peeling the egg shells three times, five times and two times. You can see that there are no broken skins
-
Then use a paring knife to gently make a small opening in the thick part of the egg white. Remember, it shouldn’t be too big, otherwise it won’t look good when cooked
-
Put the scored eggs into the cooked soup
-
Bring to the boil again, cover the pot, turn to medium-low heat and simmer for 40 to 50 minutes
-
Turn off the heat and simmer for a few hours if time allows [or refrigerate overnight for better taste]. Turn the eggs occasionally to make the coloring more even
-
After the eggs are fragrant, turn the heat back on to collect the juice. This is done to re-infuse the flavor and to color the marinated eggs for the last time. The marinated eggs do not need to be too dry. Store the marinated eggs in the refrigerator together with the remaining marinated sauce, and take them as you go
-
Oh my god, I ate three of them in one go after they were cooked, and ended up choking [To be honest, I don’t like eggs the most. I was afraid of them when I was a kid]
-
You can also cook a bowl of noodles with some vegetables in the morning and put a braised egg on it. You know how it feels
-
I guarantee that you will never want to buy food outside after eating it. As a foodie, eating does not mean that you are hungry, but that your mouth is lonely!

Food is warm because it has the warmth of the palm of your hand. Treat food with heart, treat your family well, and live seriously. This life may be ordinary, without much achievement, but I am very happy and contented every day!
