In response to the solar terms—have a pot of fragrant tea eggs
Overview
Today is the beginning of summer. The custom here is that you must eat eggs on the day of beginning of summer, whether they are salted eggs, boiled eggs or tea eggs. Yesterday I went back to my mother's house for dinner. When I was leaving, my mother brought more than twenty eggs and asked me to take them home. Today, I have just enough eggs to make tea eggs. My two treasures (Dabao’s father and Xiaobao Zhibao) like to eat tea eggs the most.

Steps
-
First wash the eggs with water and then boil them in cold water. Either pour cold water over the eggs, turn off the heat and simmer for a few minutes after the water boils for 4 to 6 minutes.
-
While the eggs are cooking, prepare the seasoning.
-
After the eggs are cooked, take them out and soak them in cold water for 2 minutes.
-
Put the prepared seasoning in the sand bowl, add an appropriate amount of dark soy sauce, light soy sauce, salt, a little sugar and water. Use the back of a knife to gently crack the eggshells without using too much force. Then put the cracked eggs into the sand bowl.
-
The amount of water should be less than that of the eggs, and boil over high heat.
-
Bring to a boil, then reduce heat and simmer for about 45 minutes.
-
Don't take it out immediately after cooking. Let the eggs soak in the brine for at least four hours. I usually soak them overnight to make them more delicious.
-
The delicious tea eggs are on the plate, and you can still smell the faint fragrance of tea.
-
I couldn't wait to take a bite, it was so fragrant and delicious!
