Overview

After I got into baking, I always thought about baking sesame cakes at home. It was not ideal at first and I was tired from chewing. Later, I asked the lady selling sesame seed cakes on the road for advice and learned that the dough should be softer. I baked it in the oven a few months ago and it was good. This time I baked it in the air fryer and it was also good.

  1. Take a large bowl and weigh out the flour, oil and salt. Oil can make the dough moister and increase the gluten of the flour. Salt also increases the gluten, but not too much, otherwise it will taste salty. Today we are making sweet sesame cakes.

  2. Slowly add an appropriate amount of water, first use chopsticks to stir into a dough, then knead it with your hands to form a smooth dough, then cover with plastic wrap or a lid and let it rest for an hour.

  3. Divide the risen dough into several equal pieces. Because my fryer has a small capacity, I couldn’t make the sesame seeds too big, so I divided them into 10 portions. If using an oven, make it larger.

  4. Take a small bowl and stir together the sugar and starch. Coarse sugar is easy to break in the end, so it is best to use fine sugar.

  5. Take a small piece of dough, flatten it slightly with the palms of your hands, and then pinch the edges thinly with your hands to form a nest shape. The middle is about three times thicker than the edges, so that both sides of the final sesame cake are equally thick.

  6. Dig a little icing sugar into the center of the dough. Don't have too many, otherwise it won't be easy to pack.

  7. Pinch the edges together and seal, trying not to leave any air. Preheat the air fryer to 200 degrees for 5 minutes in advance, or 10 minutes if it's cold.

  8. Use a rolling pin to roll it thinly from the middle up to down. Do not roll it back and forth. If there is air, do not roll it out, otherwise the back side will not bulge. It is best to sprinkle a little flour or starch on the cake, otherwise it will be difficult to pick up the cake.

  9. Spread a little water on the surface of the cake, then sprinkle with white sesame seeds and press lightly.

  10. Carefully lift up the dough (because the dough is very soft and can easily tear if you move too much, so I scraped it up with a scraper), put it into the air fryer, and bake it at 200 degrees for seven or eight minutes.

  11. When the time is up, take out the frying basket and you will see that the sesame seed cakes have puffed up. Turn the sesame seed cakes over and bake for another four to five minutes.
