Cut the onion and ginger and set aside. Add oil to the pot and stir-fry until fragrant. First add the side dishes yam and green pepper. After they are cooked, add the lamb tripe and stir-fry for 30 seconds. Then add light soy sauce and stir-fry for 30 seconds. Add cooking wine and stir-fry for 30 seconds. Finally add salt and stir-fry for 10 seconds. Finally, add sugar. You can add some green garlic leaves at the end.
