Gentle kitty paw marshmallow
Overview
It looks like a complex marshmallow, but it feels quite simple to make. You don't need to turn on the oven, and you can make a lot of kitten claws with just one egg white. Just master the state of the egg white and don't overbeat it. The soft point is easier to shape.

Use scissors to cut all the prepared ingredients from gelatine sheets into small pieces. Put the gelatine sheets into a bowl and add an appropriate amount of water to soak them until soft
-
Pour the cornstarch into the baking pan and bake in the oven (5-8 minutes, you can control it)
-
Put paper film in the mold and add cooked starch,
-
Make deep indentations with eggs and set aside
-
Add a few drops of lemon juice to egg whites
-
Beat until coarse foam appears, then add 5 grams of sugar and beat until stiff peaks form
-
Pour 20g of white sugar, 40g of maltose and 25g of water into the milk pot and cook over low heat while stirring
-
Cook until the sugar is dissolved, then turn to medium-low heat and heat to above 112 degrees and turn off the heat
-
While hot, add softened gelatine and mix well
-
Add the mixed solution to the meringue
-
Use a whisk to beat until it becomes viscous, and when lines appear, pull out a big curved groove
-
Take a portion of the marshmallow paste and pour it into a piping bag, dip a toothpick in a little red coloring and put it in
-
Use your hands to knead evenly
-
Put all the remaining marshmallow paste into a white piping bag
-
Squeeze the marshmallow paste into the deep indentation printed on the egg and then use pink marshmallow paste to extrude the pattern on the surface
-
After all the marshmallows are done, sprinkle cooked cornstarch on the surface and let them sit covered for an hour
-
When eating, just pat the cornstarch off the surface.
