Matcha Cake (Air Fryer Version)
Overview
During the National Day holiday, where did everyone go to play? I was alone at home, made a matcha cake, and made a cup of coffee. I sat on the floor-to-ceiling window, with the warm sunshine lazily shining on my body. I felt very comfortable!

Material preparation;

Making egg yolk paste: First stir the egg yolks and fine sugar evenly;

Add corn oil and mix evenly with a manual egg beater;

Add milk and mix well;

Sift in low-gluten flour and matcha powder;

Use a hand mixer to quickly mix the batter until smooth and without lumps;

Making protein paste: Add a few drops of lemon juice to egg whites;

Add fine sugar in three batches and beat until dry peaks form. Use a whisk to pull up the egg whites and form small upright peaks;

Add 1/3 of the egg whites to the egg yolk batter and mix evenly;

Then pour 9 back into the remaining egg whites and mix evenly;

Cut a piece of parchment paper slightly smaller than the cake mold, and put the parchment paper into the cake mold;

Pour the batter into the cake mold and gently shake the mold to release air bubbles;

Cover the cake mold with tin foil to prevent the surface of the cake from getting too dark during baking;

Set the air fryer to 150 degrees and preheat for 5 minutes. Put the cake mold into the frying basket and slide it into the air fryer. Invert it immediately after 35 minutes and remove from the mold after cooling completely.
