Braised French Beans with Potatoes
Overview
When I was a child, in the summer in my hometown, the green beans and potatoes were just ripe. My grandma would always make a lot of potatoes, stewed green beans and white porridge at noon, leaving half of it to eat at night without heating it. In the era without refrigerators, it was very satisfying to eat like this.

Wash and peel potatoes.

Wash the green beans and peppers.

Cut the potatoes into cubes, cut the stems of the green beans into sections, and cut the peppers into diagonal sections.

Heat the pan over medium heat and pour oil.

When the oil is 50% warm, add dried chili pepper and Sichuan peppercorns and stir-fry until fragrant.

Add peppers, potatoes and green beans.

Stir fry for two minutes.

Add salt and continue to stir-fry until salt melts.

Add soy sauce and continue stir-frying for one minute.

Add half a bowl of water.

Cover and simmer for 5 minutes.

Fry over high heat while reducing the juice.
