Mashed potatoes
Overview
Different diners like different kinds of mashed potatoes, and the recipes and ingredients are also different. However, no matter what, mashed potatoes often play an inconspicuous role on the dining table. It is not a pity to have a good dish but not to miss another. Perhaps because of this, a plate of carefully cooked mashed potatoes is more likely to impress people. It's still mashed potatoes, but if it's a little more detailed and perhaps a little more troublesome, it will show a satisfying taste.

Don't peel the potatoes, cut them into large pieces, and cut the cucumbers and carrots into thin slices. Boil hot water and set aside.

Slice the cucumbers and carrots as thinly as possible to maintain a crisp texture and adhere well to the mashed potatoes.

Put an appropriate amount of salt in the boiling water and boil the potato pieces for 40 minutes or if they can be easily penetrated with chopsticks, take them out and peel them.

Return the peeled potato pieces to the pot, heat over low heat, and squeeze with a potato masher until smooth.

Then add butter and continue squeezing.

Take out the mashed potatoes and put them into a mixing bowl. While they are hot, sprinkle with chopped onion (chop as much as possible to make it more flavorful) and stir thoroughly. Add an appropriate amount of mayonnaise while stirring.

Then add cucumber slices and carrot slices, continue to stir, and finally add fish roe and stir slowly.

Cool briefly and serve with some fish roe.
