  1. Soak the vermicelli in warm water until soft;

  2. Blanch the pork belly and slice into pieces for later use;

  5. Add the pork belly and stir-fry until evenly coloured, add star anise, cinnamon, ginger slices, light soy sauce, dark soy sauce and cooking wine and stir-fry until fragrant;

  6. Pour in water to cover the pork belly, cover and bring to a boil over high heat, then turn to low heat and simmer for an hour;

  7. When there is still 1/3 water in the pot, add the soaked vermicelli and cook over medium-low heat until the vermicelli softens. Add a little salt to taste;
