Spare ribs, oil, salt, tartary buckwheat vinegar, cooking wine, light soy sauce, sugar and other accessories

Cut the short ribs into mahjong pieces, boil them in water first to remove the fishy smell, blanch them, add oil and stir-fry until the surface is golden brown, add rock sugar;
