Chicken gizzards are one of my favorite foods. The taste is very good and the texture is chewy. Chicken gizzards are chicken stomachs, which help digestion and are very rich in protein. It's good for stir-frying or cold salad. It also has the effect of supplementing iron, and women should eat more.

Wash the chicken gizzards, blanch them in hot water, take them out and let them cool for later use.

Beat the cucumber loosely and cut into sections. Set aside.

Add an appropriate amount of water to the pot, add light soy sauce, dark soy sauce, salt, pepper, aniseed, and cinnamon, bring to a boil over high heat, put the chicken gizzards in the marinade and cook for 12 minutes, then turn off the heat. Soak and refrigerate for 1 hour. Do not cook chicken gizzards for too long as they will become hard and taste bad.

Slice the marinated chicken gizzards, put them in a large bowl with the cucumbers, add minced garlic, salt, cold soy sauce, cold balsamic vinegar, sugar, pepper oil, chili oil, and sesame oil and mix well.

Finished product is plated. The cucumber can also be replaced with celery, and some coriander can be added.
