Chive and Sophora Flower Cake
Overview
Every time when the scent of locust flowers blooms, I think of the locust flower cakes made by my mother. Today I made it myself to satisfy my craving.

Remove the stems of Sophora japonica and remove leaves and debris

Pick and wash the leeks, prepare eggs and flour

Wash the Sophora japonica three to four times and control the water

Wash the leeks, drain them, cut into 2cm sections and set aside.

Sophora japonica and chives mixed after water control

Sprinkle with salt and flour

Add eggs, wear disposable gloves and stir evenly. If it doesn't form a ball, you can add more flour. Don't add too much, as the dough will become hard.

Heat the pot and add oil

After the oil is hot, add the sophora japonica flowers, set it to medium heat, and flatten it with a spatula, not too thick

Flip over medium heat for 3 minutes and fry until brown on both sides. Drizzle a little peanut oil after flipping over. After turning off the heat, cover and simmer for a minute to make it softer.

Remove from pan and plate.
