Sauerkraut Braised Pork Ribs
Overview
Northeastern pickled cabbage is a home-cooked specialty food in Northeast China. Stewed pork ribs with sauerkraut is a great dish to go with rice. It tastes very refreshing and will not be greasy.

Prepare ribs.

Add water to the pot, add ginger, green onions, and cooking wine and blanch the ribs.

Remove the ribs and set aside.

Heat a pan over low heat and fry the ribs until golden brown on both sides.

Soak the vermicelli in cold water until soft.

Prepare sauerkraut.

Shred the sauerkraut and set aside.

Put oil in a wok and sauté the dried chili peppers over low heat.

Add sauerkraut and stir-fry until fragrant.

Put the fried sauerkraut into a casserole, add broth and bring to a boil over low heat.

Add the fried pork ribs and simmer over low heat.

Finally, add soaked vermicelli, salt, and pepper and cook for 1 minute.
