Prepare onions, ginger, rock sugar and star anise for later use

800g pork belly cut into evenly sized pieces

Boil a pot of water and pour in the pork belly blanching water

Take it out and rinse it with clean water. Keep three pieces of rose fermented bean curd for later use

Crush three pieces of fermented bean curd, add fermented bean curd juice and mix thoroughly and set aside

Pour a small amount of oil into the pot, add rock sugar and stir-fry continuously

Stir-fry till the sugar color comes out

Pour in the blanched pork belly and stir-fry evenly

Add green onions, ginger slices and star anise and stir-fry

Add rose bean curd and stir well

Finally add 2 teaspoons of cooking wine, 2 teaspoons of light soy sauce, water to basically cover the meat, 1 teaspoon of salt, bring to a boil over high heat, then simmer over low heat, about a small amount

When you see that the soup is thick and the meat is crispy, reduce the sauce over high heat and add chicken essence to taste
