Fried hairtail fish
Overview
The hairtail fish is too small and can be fried with a layer of batter. It is crispy and delicious and goes well with wine.

Wash and cut the hairtail, add cooking wine, sugar, pepper, shredded ginger and minced garlic, marinate for about 2 hours

Add an egg to the flour, then slowly add water, use chopsticks to stir into a thick paste, do not stir vigorously, otherwise the hairtail fish will not be contained

Before adding the hairtail, add about one gram of baking powder and mix well, then add the hairtail and stir

After the oil pan is hot, slowly slide in the hairtail and fry on both sides over medium-low heat until tender yellow and remove.

Heat the oil in the pan, pour in the hairtail and fry again until golden brown on both sides. Drain the oil
