Wash the saury and cut it into several cuts!

Add salt and marinate for an hour!

Chop the garlic and ginger into mince!

Prepare the sauce: oyster sauce, sugar, water, barbecue ingredients, chili oil, salt, cooking wine, light and dark soy sauce, vinegar, mix it up!

Pour oil into the pan, add saury and fry (low heat)

Flip one side over and fry the other side!

Put the fried saury into the wok, add a little oil, then add the minced garlic and ginger, then pour in the prepared sauce, fry and simmer for about ten minutes, shake it halfway through, let it burn for a while, then cover the pot and turn off the heat, simmer for a few minutes and it's done!
