Cut the tofu into 1.5 cm by 1.5 cm cubes with a knife. Wash and mince the ginger, mince the white and green scallions, and cut the green scallions into small pieces. Boil the tomatoes in boiling water for a while, remove them and cool them in cold water. Peel and cut into cubes. Put the starch in a small bowl and add water to boil. Set aside;

Add water to the pot, add an appropriate amount of refined salt, and bring to a boil. Add the cut tofu cubes and cook over medium-low heat for 3 minutes.

Put another pot on the fire, add 25 ml of vegetable oil to heat, add the minced ginger and stir-fry, then add the minced green onions and stir-fry;

Add tomato sauce, light soy sauce, a little salt and sugar, then add a spoonful of water and bring to a boil.

Remove the tofu and drain it, put it in a pot and bring to a boil, then reduce the heat to medium and simmer for 2 minutes.
