Peel onions, carrots, wash and shred.

Crack 3 eggs into a bowl, add a little pepper and salt and mix well.

Add oil to the pan and fry the eggs first.

Dish out and set aside.

Put a little oil in the pot, add onion and carrot shreds and stir-fry until cooked.

Add the scrambled eggs, season, add a little light soy sauce and salt (I usually don’t add chicken essence when cooking now).
