Stir-fried Vermicelli with Dry Chili and Spinach
Overview
A dish that takes up to 10 minutes from preparation to serving, but it is really delicious~ This is a dish I had in Shandong half a year ago. At that time, I saw that spinach could be stir-fried with vermicelli. I thought it was amazing. After taking a bite, I thought, wow, it is delicious. . (The ones eaten at Shandong Restaurant use sweet potato vermicelli, which has a better texture. My sweet potato vermicelli has not arrived yet after I finished eating it, so you can choose the mung bean vermicelli according to your own preferences.) The highlight of this dish is that it uses dried chili peppers to stir-fry the pot. It will be a little spicy when you eat it, but it is very delicious~

small bunch of mung bean vermicelli 40g, soak in boiling water for 5 minutes

While soaking the vermicelli, wash the spinach and cut it in the middle (I usually cook vegetables whole, so I cut them in the middle in order to make them more like what I have eaten before). Wash and cut 3-5 dried chili peppers into small pieces. Peel and wash 3-5 cloves of garlic

In a pan, add a few Sichuan peppercorns and dried chili peppers and saute until fragrant

Add the soaked vermicelli and quickly spread it with chopsticks. If the pot is too dry, add some water to prevent the vermicelli from sticking into clumps. Then add garlic cloves

For about 1 minute, add 1 and a half spoonfuls of light soy sauce (I used June Fresh soy sauce) to allow the vermicelli to color evenly
