Soak the spareribs in water, clean them, and chop them into evenly sized pieces

Boil the cut ribs in a pot under cold water, add a few slices of ginger and cooking wine, and blanch the water to remove the blood foam

Remove the blanched pork ribs, rinse repeatedly to remove impurities and drain the water

Add a little water to the pot, add a piece of rock sugar and slowly simmer over low heat until it turns dark red

Pour in the pork ribs and stir-fry evenly to coat with the sugar color
