Grilled lamb with green onions
Overview
Mutton is warm in nature, can promote digestion and protect the stomach. For tender lamb, I think the best way is to stir-fry or grill it. The operation is time-saving and the meat is tender and fragrant. This dish is easy to make but extremely popular and suitable for all ages.

Wash the lamb. Cut into thin slices. Cut across the grain of the meat and try to cut into larger pieces without breaking them into pieces.

Add 1 tsp pepper, 1 tsp salt, 1 tbsp cooking wine and 2 tbsp salad oil.

Mix well and marinate for 15 minutes.

Cut the onion into thin strips.

Shred the ginger and prepare two red peppers.

Use an equal amount of cooked peanut kernels and sesame seeds and grind them into powder in a food processor. Or you can buy it ready-made.

Heat the wok, add two tablespoons of oil, and fry the shredded ginger and red pepper until fragrant. Grab a little and a half shredded onions and stir-fry until fragrant.

Pour in the mutton slices and stir with chopsticks. Fry until the water in the meat is dried out and the meat changes color and becomes oily.

Add remaining onion shreds.

When the onions become soft, add 1 tablespoon of cumin and stir-fry evenly.

Sprinkle with the prepared peanut and sesame condiment, or dip the meat into the condiment and enjoy.
