Prepare food, wash and process

Soaked dried shiitake mushrooms and black fungus

Cut the tofu into 1cm thick and 3*5cm wide and long.

Blanch the tomatoes in hot water and peel them.

Cut the soaked dried mushrooms and fungus into small pieces.

Heat oil in a pan and add chopped tofu

Fry until golden brown on both sides

Add garlic, ginger slices and onion shreds and saute until fragrant

Add the mushrooms and fungus and stir-fry for three to five seconds

Add two spoons of cooking wine, two spoons of light soy sauce, and one spoon of dark soy sauce and stir-fry quickly for three seconds

Put some water, slightly cover the tofu, add a little salt, just a little bit, a spoonful of oil, cover the pot and simmer for two minutes

After two minutes, add the tomato slices and cover the pot for 30 seconds.
